Overseen by Culinary Director Richard Ekkebus, two-star Michelin restaurant Amber serves the finest modern French cuisine. Using only the finest and freshest ingredients sourced from all parts of the world. Chef Ekkebus crafts distinctive new flavours with innovative presentations to create unique dishes suiting the contemporary palate.

Design
Exhilarating interior elements blend timeless design and creative lighting that warms burnt-amber hues and further accentuates the setting’s luxurious ambience. A ceiling sculpture comprising 4,320 hanging golden rods provides dramatic artistry. Décor created by world-acclaimed designer Adam Tihany.

Private wine rooms: Topaz for 6 guests, and Agate for 10 guests (two private rooms can be combined to accommodate 18 guests).

An extensive wine list comprising of fine vintages from the world’s foremost wine-producing regions and a rare selection of prestigious names. The list includes 1,250 varieties and approximately 8,000 bottles.

line caught amadai, with orange & fennel confit, “bottarga” grated potatoes bouillabaisse and olive oil emulsion
