Concept  
The 70-seat signature restaurant reflects Chef Rojas’ flavorful cuisine of Asian with Latin and Mexican influences. Indoor dining can accommodate up to 45 while the outside terrace offers an air of romance for 25 diners.

Exemplifies Mandarin Oriental’s commitment to providing five-star dining experiences to its guests and local restaurant patrons.

Cuisine 
The menu features fresh seafood, meat and poultry, including Braised Short Ribs, Caramelized Chilean Sea Bass with Sayko Miso and Crispy Coconut Rice, Oven Baked Suckling Lamb and Mayan Pig Gyosas with Black Beans and Orange-Habanero Chutney.

Desserts prepared by Pastry Chef Ismael Salazar include Candied Carrots, White Chocolate Mousse, Candied Orange & Hibiscus Sauce and Chilled Mandarin & Fennel Soup, Coconut Ice Cream & Peanut Crisp.

There is an international wine list with an impressive list of high-end Mexican wines and full bar offering premium libations.

Special Features
Ambar offers outdoor dining overlooking the tranquil lagoon.

For larger parties, there is a private table located in the center of the dining room with an elevated floor on a circular glass over limestone.

Open show kitchen set behind glass and wood with a table top of onyx. 

There is an expansive outdoor lounge adjacent to the bar offering seating for 15 with views of the lagoon and jungle.

Private romantic candle lit dining on Ambar’s upper terrace Privé.  

Restaurant interior is an artful, sleek and lively space that revels in onyx. Soaring ceilings, teak wood floors and walls of glass provide stunning vistas. There is a sleek copper dome-shaped roof. 

Interactive cooking classes held in Ambar’s open kitchen.
