Richard Ekkebus

Richard Ekkebus, one of the culinary world’s most exciting young personalities, has joined the Landmark Mandarin Oriental as Executive Chef overseeing all cuisine – in particular, the hotel’s iconic signature restaurant, Amber.

Ekkebus began his illustrious career via an apprenticeship in his native Holland under Michelin starred chefs Hans Snijders and Robert Kranenborg and won the prestigious Golden Chefs Hat for ‘Young Chef of the Year’ in Holland.

His budding reputation, distinctive style and strong desire to experiment led him to take up the Executive Chef position at the Royal Palm in Mauritius (a member of Leading Hotels of the World). After seven successful years he moved to another legendary property, The Sandy Lane in Barbados, where the wide-ranging culinary traditions of the Caribbean further seduced him.

Recognized as one of the top culinary talents in the world, Ekkebus has already been featured in several books on the world’s greatest chefs, and has cooked for top international celebrities from Tiger Woods and Michael Jordan to Beyonce and Andrew Lloyd Webber.

His innovative approach to cuisine extends to all meal periods, Ekkebus will combine flavours never seen before in Hong Kong, with his signature creations including transparent Gillardeau oysters and cucumber ravioli; black truffle and foie gras sushi; and iced pandam leaf sabayon with ginger ice-cream and cashew brittle.

Ekkebus’s spectacular canvas of modern culinary art will combine perfectly with Amber’s exhilarating interiors designed by iconic interior designer Adam Tihany – in a city that is renowned throughout the world for its quality and variety of cuisine, Amber is sure to be one of Hong Kong’s most glamorous contemporary dining experiences.
