Chef Richard Ekkebus’ contemporary interpretation of French cuisine has earned numerous awards both in Hong Kong and internationally, including two coveted Michelin stars. Using the finest ingredients and classical techniques, he crafts distinctive new flavours; together with his artistic presentation, Ekkebus creates dishes to beguile the contemporary palate.
Signature creations include ‘Dungeness Crab in 5 Textures and 4 Temperatures’, ‘Langoustine with Iberian Pork Belly’ and ‘Tasmanian Salmon with Kyuri Cucumber’.
The exhilarating interiors by internationally renowned Adam Tihany, blend cutting-edge design with inventive lighting, which warms the burnt amber hues and accents the luxurious details. The ceiling sculpture is an original and provocative piece of art.
