One of the most artistic and celebrated chefs in the world today, Pierre Gagnaire opened his first and only US restaurant at the Mandarin Oriental, Las Vegas to rave reviews in 2009. The accolades continue today and most recently, Twist received the coveted Forbes Five Star award for 2016.
Located on the 23rd floor, the stunning dining room provides the perfect backdrop for Twist’s groundbreaking menu of classic French cuisine with a contemporary edge. Featuring floor-to-ceiling windows and a dramatic glass staircase leading up to a suspended wine loft, the restaurant’s most striking feature is arguably its lighting, which incorporates more than 300 gold globes designed to look as if they’re floating in the air across the ceiling.

Twist’s innovative menu infuses the simplicity of classic French cuisine with an unforgettable modern spin. Imaginatively created, each dish is designed to delight the senses through the careful pairing of flavours and textures for which Gagnaire is renowned. In the words of Gagnaire himself, “The dishes have to be well assembled, easy to understand and possess eccentricity. And, of course, they have to be delicious.”
Open only for dinner, Twist offers guests the choice of grand pairings, a special vegetarian menu, or seasonal à la carte dishes. Twist also showcases the finest cuts of meat such as the Japanese Wagyu Beef Filet, Nebraska Prime Rib Eye and American Wagyu Filet.
Born in Apinac, France, Pierre Gagnaire is one of the world’s most renowned chefs. His excellent cuisine is often described as modern, although it is deeply rooted in the French cooking tradition.
The son of restaurant owners, Gagnaire began his career in Lyon before travelling the world to hone his craft. In 1976, he returned home to his family restaurant, Le Clos Fleury, where he earned his first Michelin star. He opened his first restaurant in 1981 in Saint Etienne, going on to win two Michelin stars, an achievement he exceeded in 1992 when his second restaurant won three Michelin stars.
Gagnaire moved to Paris in 1996 where he opened his eponymous restaurant, going on once again to win three Michelin stars. Since then, he has become Head Chef and owner of numerous restaurants worldwide including the highly acclaimed Pierre at Mandarin Oriental, Hong Kong. In 2009, Gagnaire joined forces with Mandarin Oriental, Las Vegas, to open Twist, his first and only US restaurant.
Showcasing nearly 1,700 selections from around the world, Twist's signature floating wine loft is a focal point of the dining space. Winners of the 2014 Wine Spectator Best of Award of Excellence, our experienced wine team curates a collection featuring classic bottlings and suggestions from more eclectic and lesser-known wineries. We have ensured that every region is laid out from North to South and West to East providing geographic background as a guide when pairing.
Will Costello, Wine Director and Master Sommelier
Will Costello oversees the wine program for the Mandarin Oriental, Las Vegas. His scope encompasses the Forbes Five Star fine-dining outlet TWIST by Pierre Gagnaire, MOzen Bistro, Mandarin Bar, the hotel’s Pool and Café and In-Room-Dining, as well as the conference services, banquet and catering selections. In his area of operations is the daily upkeep and maintenance of Mandarin Oriental, Las Vegas’ wine program and the Wine Spectator Best of Award of Excellence for TWIST by Pierre Gagnaire. Costello implements and takes a leading role in staff and sommelier training. Costello has competed in numerous wine related competitions including The Court of Master Sommelier’s TOP|Somm, The Chaine de Rotisseurs “Young Somm Competition” and the Ruinart Champagne Challenge, and was named one of Wine & Spirits Magazine’s “Top New Sommeliers 2013.”
