Strong on flair and flavor, the waterfront Café Sambal takes the dining experience well beyond that of the typical hotel bistro, featuring a versatile, distinctive menu encompassing specialties from the East with an unparalleled sushi and sake menu. Perfect for area business patrons and leisure guests alike, the relaxing spot is perched on the edge of Biscayne Bay and embodies the spirit of Miami – sexy, modern, spicy and laid back.

Lunch and dinner provides innovative menus inspired by the Orient with a variety of inventive starters, seafood samplers and noodle specialties as well as classics, including salads and hot entrees.

The Sushi Bar has an inviting appeal serving a variety of delectable sushi and sashimi in the restaurant’s intimate bar area, where guests may also sit and enjoy observing the sushi chef’s talents.

Café Sambal spills out to a partially covered terrace where the majority of seating allows guests to dine by the shimmering bay or the glow of the downtown Miami skyline. 

About

Chef de cuisine Eduardo Quintana has been with Mandarin Oriental, Miami since the hotel’s pre-opening in 2000 as Café Sambal’s sous chef prior to taking the helm as chef de cuisine in spring 2007.  Chef Quintana has worked at several prestigious restaurants and alongside many top chefs from Bangkok to Hong Kong and Macau, where he drew inspiration from their ingredients and techniques.

His passion for food and his eagerness to delight even the most discerning palates has inspired Chef Quintana to create a delectable contemporary Asian menu as well as create a selection of signature “healthy cuisine” items.  The menu features delicious dishes like the “Tangerine-Anise Short Ribs” with braised boneless beef, scallion pancake and green and yellow chives; “Jumbo Lump Blue Crab Cake” with tropical fruit ceviche and spicy mango tartar; and such flavorful signature healthy items as “Teriyaki Salmon” with kalamansi, kafir lime sauce and stir fried Asian greens; and “Crispy Lemon Caramel Chicken” with water chestnuts, bamboo shoots, sugar snap peas, carrots and bamboo rice.

Born in Cuba and raised in Miami, Chef Quintana spent most of his youth in the kitchen; watching and helping his grandmother prepare traditional Latin family meals for his large family.  These experiences, combined with his knowledge acquired throughout many years of constant dedication and his adventurous, innovative spirit, flourish now at the kitchen of Café Sambal.
