The art of cuisine

Under the watchful eye of acclaimed chef Antonio Guida, our two Michelin-starred Italian restaurant Seta has fast become one of Milan’s most talked-about dining destinations. Updating traditional recipes with his own creative culinary techniques, chef Guida’s menu offers an exciting, contemporary take on classic Italian cuisine.

Located in the hotel’s second courtyard, the restaurant’s timeless design offers the perfect backdrop to chef Guida’s dishes. Featuring wide glass windows, inner and outer spaces merge into one, offering guests the opportunity to dine outside during the warmer seasons. Inside, a visible kitchen allows diners the opportunity to watch our chefs at work, turning the dining experience into a piece of theatre.

Exciting, imaginative and full of flavour

Renowned for his use of colourful and inspiring ingredients, Antonio Guida’s dishes are celebrated for their impeccable flavours and exquisite presentation. Inspired by chef Guida’s southern Italian heritage and influenced by the culinary heritages of Tuscany and France, the menu offers a tantalising taste of modern Italian cooking.

Each gastronomic experience concludes with chef Nicola Di Lena’s pastry menu, which offers exotic desserts inspired by Seta’s culinary philosophy of highlighting individual flavours and then combining them.

To accompany your meal, our wine list includes more than 500 labels, with emphasis placed on Italian wines, and champagnes from historic and niche producers.

Meet the Team

One of the most celebrated chefs in Italy, Antonio Guida has always been fascinated by the world of culinary alchemy. Having travelled extensively in Europe and Asia, chef Guida worked at various Michelin-starred restaurants including Pierre Gagnaire in Paris, Enoteca Pinchiorri in Florence and Don Alfonso on the Amalfi Coast, before joining La Terrazza Hotel Eden in Rome. After two years and having risen to the position of Chef de Cuisine, he joined Il Pellicano as Executive Chef in 2002, going on to win two Michelin stars in 2004 and 2010 for the restaurant.

Following 12 years at Il Pellicano, chef Guida was appointed Executive Chef at the new Mandarin Oriental in Milan, where he is now showcasing his culinary art in the gastronomic surroundings of one of Italy’s greatest cities. Antonio Guida led the hotel’s Seta restaurant to gain the first Michelin star in 2015, four months after opening, followed by the second Michelin star in 2016.

A great part of his success comes from the strong team he has put together. Executive Sous Chef Federico Dell’Omarino has been Guida’s right-hand man since 2002, helping him further develop his ideas of innovative cuisine. Of equal importance is Pastry Chef Nicola Di Lena, who has been creating the perfect finale to the Antonio Guida’s culinary itineraries since 2006. To complete the experience, Restaurant Manager Alberto Tasinato ensures the smooth translation of Chef Guida’s philosophy into the impeccable service that our discerning guests have come to expect.
