In the evenings José Hernandez takes his established place at Mandarin Bar and along with his pianist presides over a warm, sophisticated and enduring scene. Regulars return for champagne after shopping, Martinis before opera and a night cap.

Mr Hernandez has been welcoming guests and mixing their preferred drinks for more than 20 years.  He has a superb collection of vintage liqueurs; one of the most popular is the 60 year Old Louis XIII Remy Martin. With a wealth of experience Mr. Hernandez enjoys experimenting and has introduced his own cocktail creations such as the Mandarin Reef, an icy blend of Absolut, Havana Club, Passoa, Limette and Physalis.

Jazz standards are played to guests’ requests, and the notes drift up the wide renaissance staircase to Restaurant Mark’s.
