The land of the Incas serves up a generous range of unique ingredients, with plentiful Japanese, Spanish and Chinese influences due to immigration. The menu includes ceviches – specialities based on marinated raw fish – and tiraditos – finely sliced raw fish subtly seasoned at the time of serving. The culinary journey continues with anticuchos – meat or fish skewers – a popular version of Peruvian street food.
