Richard Ekkebus

Born in Holland, Culinary Director Richard Ekkebus fell in love with food as a child. Following in the footsteps of his restaurant-owning grandparents who taught him the importance of using only the freshest produce, he is now regarded as one of the best chefs in Hong Kong.

Having trained under Michelin-starred Dutch chefs Hans Snijders and Robert Kranenborg, Ekkebus refined his techniques working with French masters such as Alain Passard, Guy Savoy and Pierre Gagnaire. From there he spent time honing his skills in Mauritius and Barbados before bringing his commitment and skill to Amber in 2005. 

His 52-strong team of talented chefs share his committed work ethic and under his leadership have won two Michelin stars for nine years running.
