With a stunning dining room as its backdrop, Culinary Director Richard Ekkebus’ contemporary interpretation of French cuisine has earned numerous awards, including two Michelin stars, and No. 20 on The World’s 50 Best Restaurants List 2016, sponsored by S. Pellegrino and Acqua Panna. Using only the finest ingredients, Chef Ekkebus uses his classical training and creativity to invent dishes to excite and enthuse even the most jaded palate.
Blending cutting-edge style with inventive lighting, the restaurant’s dramatic design provides the perfect setting for Amber’s award-winning cuisine. With a breathtaking bronze chandelier as its centrepiece, the décor uses warm natural hues to create an elegant ambience that allows the masterful menu to be the focus of what is an incredible dining experience.
Influenced by his upbringing on the Dutch seaside, Culinary Director Richard Ekkebus’ menu places an emphasis on seafood from around the world. Every day the restaurant receives a shipment of fresh fish straight from markets in Fukuoka and Hokkaido, whilst specialities such as blue lobster are imported from as far away as France.
To satisfy the different needs of our guests, we have developed a choice of menus ranging from a power lunch to multi-course banquets and an ever-changing nine-course degustation menu. To compliment our dishes, we offer an extensive wine list displaying vintage depth and breadth across many wine regions.
The menu changes every three months to accommodate the seasons.
Born in Holland, Culinary Director Richard Ekkebus fell in love with food as a child. Following in the footsteps of his restaurant-owning grandparents who taught him the importance of using only the freshest produce, he is now regarded as one of the best chefs in Hong Kong.
Having trained under Michelin-starred Dutch chefs Hans Snijders and Robert Kranenborg, Ekkebus refined his techniques working with French masters such as Alain Passard, Guy Savoy and Pierre Gagnaire. From there he spent time honing his skills in Mauritius and Barbados before bringing his commitment and skill to Amber in 2005.
His 52-strong team of talented chefs share his committed work ethic and under his leadership have won two Michelin stars for nine years running.
Surrounded on all sides by the restaurant’s glass-clad wine cellar, our Private Wine Room seats up to 12 guests in luxurious privacy and can be adapted into two even more intimate settings.
Enjoying a stunning design, this sumptuous retreat is decorated with rich golden organza curtains, a plush geometric carpet and chocolate brown curvilinear chairs which invite guests to linger comfortably over Amber’s award winning dishes.
To complete the scene, a discreet chandelier casts light upon a table covered with Frette linen and set with Amber’s bespoke Bernardaud china and Christofle stemware.
