Pop-Up Restaurant by Florian Favario

We are delighted to announce that Mandarin Oriental Lutetia, Paris will be hosting, the first pop-up restaurant of Chef Florian Favario, renowned for his refined and sustainable culinary philosophy at the helm of L’Auberge de Montmin, a two-Michelin-starred and Green Star restaurant. This exceptional gastronomic residency will take place at Salon Saint-Germain from 5 November to 29 November, 2025.

Over three weeks, the Chef will present a seasonal tasting menu featuring nine courses from Savoyard inspirations served five evenings a week (Tuesday to Saturday), in an intimate setting at the only palace hotel on the Left Bank.

Meet Florian Favario

Born in Haute-Savoie, Florian Favario began his culinary journey at 15 at Le Clos des Sens in Annecy and trained with renowned chefs including Marc Veyrat and Michel Rostang. In 2019, he opened L'Auberge de Montmin near Lake Annecy, earning two Michelin stars by 2023 for his innovative, locally inspired French cuisine. He works alongside his wife Sandrine to create a unique dining experience. In January 2025, he was named Chevalier de l’Ordre national du Mérite for his contribution to French gastronomy.
