Following the success of the seventh floor—home to a record-setting seven Michelin stars and a Green Star—a new venue will serve as the connective tissue between its four exceptional restaurants. Inspired by its name, BLANC DE NOIRS’s black-and-white design emphasizes luxury, comfort, craftsmanship, and exceptional quality.

Driven by innovation with purpose, the bar’s beverage program offers one of Asia’s most extensive Champagne selections, with 30 by-the-glass Champagne options in a 500-label cellar of rare vintages and grower cuvées, where guests may also access to Amber’s iconic 3,000-label wine collection. Signature rituals include curated Champagne flights, and the nightly Champagne O’Clock fountain, transforming evening into unexpected theatre. The cocktail program champions the art of bubbles alongside timeless classics.

The Champagne bar features 30 well-spaced seats with comfortable highchairs, creating an intimate and relaxing atmosphere. Every detail has been thoughtfully curated to align with the overarching vision of delivering an outstanding bar and dining experience of the highest quality, setting the sophisticated tone that defines the entire seventh floor experience.

BLANC DE NOIRS also showcases an impressive selection of exceptional caviars specially selected for Amber, along with caviar-enhanced dishes. Seasonally, the menu places a strong emphasis on premium truffle varieties—including White Alba, Black Périgord, Western Australian, and Tasmanian truffles—paired thoughtfully with humble ingredients.
