Meet the Pastry Chef

Nicolas Guercio has dreamt of pastry-making since childhood. After studying cookery he turned to pastry, before a series of trips let him gain international experience. Today Chef Pâtissier at Lutetia Paris, he expresses himself fully through his creations, which are both gourmet and creative. Chocolate-making, confectionery, pastry-making, biscuit-making and ice-cream-making are all skills that Nicolas and his teams have mastered to perfection.

From an early age, Alessio Maselli developed a deep love for Italian cuisine, inspired by the authentic flavours of his native region and the cherished family meals that brought everyone together. Trained in some of the finest kitchens across Europe. Chef Alessio Maselli crafts dishes at Le Saint-Germain that pay homage to his heritage while embracing a contemporary spirit. Each plate reflects his passion for quality ingredients, meticulous technique, and the joy of sharing generous, heartfelt cuisine.

At Le Saint-Germain, he unveils an elegant evening menu infused with Mediterranean sunshine and seasonal inspiration. Drawing from his Italian roots while honouring French culinary classics, Alessio Maselli presents a delicate and modern interpretation of southern flavours, offering a refined escape that blends Parisian elegance with the warmth of the Riviera.
