This year, Pastry Chef Adrien Bozzolo has teamed up with perfume house Givaudan to create a yule log in the form of a fan, a nod to our hotel’s Oriental heritage and the symbol of the Mandarin Oriental group.
As a real artistic masterpiece in “trompe l'oeil”, the yule log follows with perfection the outline of the legendary accessory, to its lacquered coating and its ginko leafs engravings. The shape of this yule is a real technical masterpiece, and its flavors and associations are surprising.
Just as the composition of a perfume, the recipe combines ingredients selected meticulously to reveal the quintessence of each aroma. A crispy praline with Okinawa black sugar and Bubu Arare is topped with an intense chocolate biscuit. Then, a creamy base of Loma Sotavento dark chocolate, pure origin of Dominican Republic brings a fruity and delicate floral note revealed by a red pepper from Madagascar. At its heart Iyokan mandarin and Kogan ginger are enveloped by a light Loma Sotavento chocolate mousse.
The Mandarin Oriental, Paris yule log is available in limited edition from 22 to 26 December 2022 to be ordered 48 hours in advance at
+33 (0)1 70 98 74 00 for EUR 108 (6 people).
An individual yule log is also available from 1 to 30 December at a price of EUR 18 on site.
