Richard Ekkebus

Born in Holland, Culinary Director Richard Ekkebus fell in love with food as a child. Following in the footsteps of his restaurant-owning grandparents who taught him the importance of using only the freshest produce, he is now regarded as one of the best chefs in Hong Kong.

Having trained under Michelin-starred Dutch chefs Hans Snijders and Robert Kranenborg, Ekkebus refined his techniques working with French masters such as Alain Passard, Guy Savoy and Pierre Gagnaire. From there he spent time honing his skills in Mauritius and Barbados before bringing his commitment and skill to Amber in 2005. 

His 76-strong team of talented chefs share his committed work ethic and under his leadership have won two Michelin Stars for 14 years running and Michelin Green Star in 2022.

As a champion in sustainability, Ekkebus is named the president of Food Made Good HK 2022. In his new capacity, he will continue to inspire people to make changes in their kitchens and their communities and work with current and potential members as well as landlords to support their tenants in their sustainability journey.
