We are proud to welcome celebrated Singaporean chef Pang Kok Keong, recognised for his mastery of both French patisserie and traditional Hakka cuisine. In tribute to his Hakka roots, Chef Pang will present one of his signature dishes, Mee Tai Mak. This soulful bowl of handmade rice noodles with tender pork slices and preserved vegetables is simmered in a deeply flavourful broth, capturing the spirit of Hakka home cooking elevated by Chef Pang.

Blending innovation with tradition, Shiny Phua, the founder of Ah Mah’s Legacy, draws on her grandmother’s time-honoured techniques to reimagine classic kueh with healthier, modern touches for the next generation.

In celebration of SG60, Shiny is showcasing her craft with a special pop-up at the hotel where guests can savour handmade Muah Chee, soft, chewy glutinous rice balls rolled in crushed peanuts, and Orh Nee, a rich and velvety yam paste.

Originating from South Indian cuisine, Putu Piring are a beloved Malay speciality in Singapore. These steamed rice cakes are filled with rich Gula Melaka (palm sugar) and topped with lightly salted, freshly grated coconut.

For SG60, we are honoured to present this nostalgic treat from Haig Road Putu Piring, a heritage stall cherished by generations of Singaporeans. First established as a humble roadside cart in the 1930s, it has grown into a household name with multiple locations across the city and was featured on Netflix’s Street Food, bringing its story and flavours to an international stage.

Kacang Puteh was once a familiar sight outside cinemas across Singapore, sold in paper cones from pushcarts. A cherished part of street food culture in the 1960s and ’70s, this nostalgic snack of roasted or fried nuts, beans and sugar crackers remains a fond memory for many.

Today, this once-common tradition is rarely seen. For SG60, we are pleased to welcome one of Singapore’s last Kacang Puteh vendor, Uncle Moorthy who will bring you a wide varieties of handmade snacks to Mandarin Oriental, Singapore as he revives the charm of yesteryear on three special evenings.
