Chef Masaaki Miyakawa’s lifelong passion for sushi brought him from the northern island of Hokkaido to the capital of Tokyo. Chef Miyakawa also spent time in Hong Kong before returning to Hokkaido to establish Sushi Miyakawa in 2014. The eponymous restaurant Sushi Miyakawa was lauded with three Michelin stars. Sushi Miyakawa is the only sushi restaurant in Hokkaido to hold this highly revered accolade. Each chef working at Sushi Shin by Miyakawa trains regularly with Chef Miyakawa, and his frequent visits to the Mandarin Oriental, Tokyo ensure that guests at Sushi Shin by Miyakawa experience the same exquisite sushi courses he serves daily in Sapporo.
